POTATOE CURRY



This is boiled potatoe curry, which is a dry curry that goes along with roti or can also be stuffed in dosa for masala dosa.Easy to prepare and tastes good and Iam sure you will enjoy it with your family.

INGREDIENTS:

Potatoes-3Large(peeled and boiled)
Onion-1medium(thinly sliced)
Green Chilli-6medium/acc to your taste
Methi Leaves-1/4cup chopped(optional)

Tadka/Popu :

Oil-2tbspn
Chana Daal-2tspn
Urad Daal-1tspn
Cumin/Jeera-1tspn
Mustard/Aavalu-1tspn
Curry Leaves-10
Cilantro Chopped-1tbspn
Lemon juice-1-2tspn
Salt to Taste
Turmeric powder-1/4tspn


PROCESS:
-Clean potatoes and cut them into 1/4 size and boil them in water by adding salt to taste.Let them cool down ,peel the skin and mash/cut into 1-2inch size bite size pieces.
-Heat a pan and add oil.Add tadka ingredients and once they turn golden color add green chilli and onion and saute them till they turn soft and trasnparent.Add boiled potatoes ,mix well, cover and cook for few minutes(5-10) till potatoes absord the flavour .Open and check for salt if needed add litlle more accordingly and turn off and add chopped cilantro .

--Aloo Methi version

This recipe goes well with roti/chapati .Adding Methi/Menthi Kura leaves gives very good flavour to this curry .After adding boiled potatoes and cooking for about 5min add methi leaves ,cover and cook for about 5-8min untill done.

BEERAKAYA THOKKU PACHADI


INGREDIENTS:

Beerakaya/ridge gourd pottu/skin-1cup
Roasted Peanuts-1/2cup
Garlic Cloves-5(minced)
Dry Red Chillies-6-8
Curry Leaves-2tspn
Chana Daal -1tbspn
Urad Daal-2tspn
Cumin/Jeera-2tspn
Soaked Tamarind-2tspn
Oil-1tspn
Salt to taste


PROCESS:
--Cook beerakaya pottu in a pressure cooker for 6whistles by adding 1-2tspn of water and keep it aside to cool down.
(you can place tamarind(seedless) along with pottu in the cooker)
--Meanwhile heat a pan and add oil to it .Addgarlic and roast then add jeera, urad daal, chana daal and roast them till they change color.
Then add red chilli and curry leaves and once they are roasted turn off the gas and let them cool.
--Once the ingredients are at room temperature first grind the dry mixture to powder and then add cooked pottu and grind to a rough paste without adding water.

Yummy beerakaya thokku pachadi is ready to serve with idly,dosa ,roti or warm rice.Enjoy!

OATS UPMA

Oats/oatmeal upma is a healthy and refreshing breakfast.Easy to make and takes 15min to prepare.It tastes yummy and iam sure everyone in your family will love the taste including kids.

INGREDIENTS: (Serves 2ppl)

Instant oats-3/4 cup
Water--1/4to 1/2cup
Onion--1/4
Greenchilli-1-2
Capsicum chopped-1/4cup
Grated carrot-2-3Tbspn
Ginger--1/2tspn
Curryleaves--1tspn
Cilantro/corianderLeaves--2tspn
Lemon juice-1tspn

TADKA INGREDIENTS:
Veg Oil/EV Oil-2tspn
Mustard seeds--1/4tspn
Jeera/Cumin--1/4tspn
Urad Daal-1/4tspn
Cashew nuts split-1tspn
Asafoetida-one pinch
Turmeric powder-one pinch

PREPARATION:
--First on low heat dry roast instant oats just for few minutes (3-4min),and set them aside
--Now take a pan and when the pan is hot add oil then add cashew nuts and when they turn light brown add tadka ingredients.
--Now add onions,greenchillies,and saute them till onions are translucent then add capsicum and and cook for few minutes till they are tender.
--Add grated carrot and after 2-3 minutes add roasted oats and add 1/4 cup water(sprinkle water on the oats).
--close the pan with lid and cook for 2-3 min on low flame.Check later to see if it is dry and sprinkle some water(if needed).
--Close and cook for couple of minutes and turn off.Add cilantro and lemon juice and mix and serve hot.
This recipe tastes good when served warm.You can add vegies according to taste.Adding capsicum gives very yummy flavour.Hope you try this recipe and enjoy it with your family.

Chewy Oatmeal and Raisin Cookies



Yummy and Healthy oatmeal and raisin cookies that everyone would love.Kids will defintely love them.For me it works as a breakfast with some hot tea or Coffee, sometimes as an energy bar or as an evening snack.You can make your own variations according to your taste and can also be made as Bars.

INGREDIENTS:

1 1/2 cup old fashioned rolled oats
1/2 cup All purpose flour
1/2 cup Raisins
1/2 tsp Baking Soda
1/2 tsp Salt
6tspn Unsalted Butter(softened)
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp Vanilla extract
1tsp ground cinnamon
PREPARATION:
Preheat oven to 350 degrees. In a medium bowl, whisk together oats, flour, raisins, baking soda, and salt; set aside. Using an electric mixer, beat butter and sugars until light and fluffy, scraping down bowl as necessary. Add egg and vanilla; beat until combined. Gradually add oat mixture; beat just until combined.
Drop dough by rounded tablespoonfuls, 2 inches apart, onto two baking sheets. Bake until cookies are golden brown but still soft, 12 to 16 minutes, rotating sheets halfway through. Cool 5 minutes on sheets; transfer cookies to a wire rack to cool completely.
