Kobbari Chutney-Coconut&Cilantro Chutney For Idly or Dosa



This is an andhra style Coconut Chutney for Idly or any kind of Dosa.
Just takes few minutes to prepare and can be made freshly for the breakfast.
Can also add tempering  if you would like to.

INGREDIENTS:

Fresh grated coconut or Frozen grated coconut-1/2cup
Putnala Pappu or Dalia-1cup
Salt
Cumin seeds-1/2tspn
Green Chilli-3-4(acc to taste)
Curry Leaves-few
Cilantro Chopped-1/2cup
Ginger chopped-1inch piece
Coriander powder-1/2tspn(can be made at home-grinding roasted coirander)
Oil-1tspn
Lemon juice or tamarind juice -1tspn
Water for grinding.


PROCESS:

Heat a pan , add oil , add cumin ,greenchilli,curry leaves fry for 2min .
Add dalia/Putnala pappu fry for a min,add coriander powdercilantro.ginger  and turn off the gas.
Once this mixture cools down , take it in a blender or grinder and grind it by adding required salt and
lemon juice acc to taste .Add water acc to desired consistency of the chutney.
Take it into a serving bowl and serve it with warm idly or dosa.

If you would like to add tempering , you can add it after taking chutney into a bowl.
But otherwise also it tastes perfect .To avoid extra oil i usually do not do the tempering .:)

Bangaladumpa Vepudu-Potaoe Stir Fry-Aloo Fry..




Bangaladumpa or aloo fry is an all time favourite fry  liked by everyone , from kids to adults.
An easy dish that can be made quickly and is enjoyed by everyone.
My daughter loves potatoe fry and potatoe peas curry.So i often make it at home for my kiddo.
We all love aloo fry when served with warm rice and some rasam or sambar.Tastes yummy...!

INGREDIENTS:

Potatoes/Aloo-2large Chopped into small cubes
Onion -1/4 cup chopped
Salt- As needed
Cilantro for garnish

Popu Ingredients:

Jeera/Cumin seeds-1/4 tspn
Aavalu/Mustard seeds-1/4tspn
Red Chilli-1-2(acc to taste)
Curry Leaves-few
Turmeric powder-1/8 tspn
Coriander powder-1tspn
Garlic Crushed-2(optional)
Veg or Canola oil-1tbspn

PROCESS:

Heat a wide open pan ,add oil.Add garlic and saute till golden brown .
Add other popu ingredients and saute for a minute.Now add chopped onions and saute till translucent.
 At this point add chopped potato/Aloo and fry for few minutes by stirring occasionally on medium heat.
Do not add salt immediately.Add salt after they turn golden brown and are 3/4 cooked.Then we will get the crispiness .

Once aloo turns nice golden brown , add desired salt , add coriander powder, fry for 3min . 
Turn off the gas, garnish with chopped cilantro.Serve it with warm rice and some daal or sambar.

Atkula Upma--Poha Upma



Atkula Upma is an easy and quick breakfast or snack time tiffin recipe that can be made with very few
ingredients that are already available in your pantry.Its a 10 min recipe that anyone can prepare, when they
want to cook something instantly that's tasty and filling.It tastes delicious , tastes just like lemon rice.


INGREDIENTS:

Atkulu/Poha-1.5cup
Onion Chopped-1/2cup
Green Chilli-2
Ginger Finely Chopped-1tspn
Roasted Peanuts-1/3cup
Turmeric Powder-1/8tspn or one pinch
Lemon Juice from 1/2 lemon(acc to taste)
Oil-1tbspn
Cilantro for Garnish

Popu Ingredients:

Urad Daal/Minapappu-1/2tspn
Cumin Seeds/Jeera-1/2tspn
Mustard Seeds/Aavalu-1/4tspn
Red Chilli-2
Curry Leaves-6
Ingua/Hing-one pinch

PROCESS:

Firstly wash atkulu/poha twice and drain all the water by placing it in colander and keep it aside.
Chop all the veggies needed.

In a pan heat oil , fry peanuts for 5min on medium( if you are not using roasted peanuts).
Add popu ingredients and once they splutter add green chilli, curry leaves, onions,ginger and turmeric
powder.Add required salt for the recipe .Saute onions for 3-4min untill they are soft.

At this point add atkulu or poha and mix well for 2-3min.
Turnoff flame add lemon juice and mix well.Finally add cilantro for garnish.

Quick , Easy and Delicious Atkula Upma is ready to serve.

Note:
One can also add chopped veggies like capsicum/bell pepper , or carrot  or  potatoes
while cooking onions and make a different variation to this recipe.
