Atkula Upma--Poha Upma



Atkula Upma is an easy and quick breakfast or snack time tiffin recipe that can be made with very few
ingredients that are already available in your pantry.Its a 10 min recipe that anyone can prepare, when they
want to cook something instantly that's tasty and filling.It tastes delicious , tastes just like lemon rice.


INGREDIENTS:

Atkulu/Poha-1.5cup
Onion Chopped-1/2cup
Green Chilli-2
Ginger Finely Chopped-1tspn
Roasted Peanuts-1/3cup
Turmeric Powder-1/8tspn or one pinch
Lemon Juice from 1/2 lemon(acc to taste)
Oil-1tbspn
Cilantro for Garnish

Popu Ingredients:

Urad Daal/Minapappu-1/2tspn
Cumin Seeds/Jeera-1/2tspn
Mustard Seeds/Aavalu-1/4tspn
Red Chilli-2
Curry Leaves-6
Ingua/Hing-one pinch

PROCESS:

Firstly wash atkulu/poha twice and drain all the water by placing it in colander and keep it aside.
Chop all the veggies needed.

In a pan heat oil , fry peanuts for 5min on medium( if you are not using roasted peanuts).
Add popu ingredients and once they splutter add green chilli, curry leaves, onions,ginger and turmeric
powder.Add required salt for the recipe .Saute onions for 3-4min untill they are soft.

At this point add atkulu or poha and mix well for 2-3min.
Turnoff flame add lemon juice and mix well.Finally add cilantro for garnish.

Quick , Easy and Delicious Atkula Upma is ready to serve.

Note:
One can also add chopped veggies like capsicum/bell pepper , or carrot  or  potatoes
while cooking onions and make a different variation to this recipe.

Ravva Dosa


RAVVA DOSA:


INGREDIENTS:                                                                                                                                    

  • Bombai ravva(Sooji)-1cup

  • Rice flour-1/2cup

  • Maida(all purpose flour)-1/4cup 

  • Finely chopped onions-1/2cup

  • Finely chopped green chilli-5

  • Finely chopped Cilantro -1/4cup
  • Finely chopped ginger-2tspn

  • Cumin seeds-1tspn

  • Finely chopped ginger-2tspn

  • Salt to taste

  • Buttermilk-1cup+water1cup
  • Oil 


  • PROCESS:

    Take a mixing bowl add all the ingredients and mix well by adding required water to form the batter(the batter should be little watery not very thick to get crispy rava dosa).Leave the batter for 15-30min.

    Heat a nonstick pan  and use 1 to 2 laddles of batter and pour it on pan .Add oil around dosa and let it cook for 2-3 min on each side till it turns golden brown and little crisp.Continue the process for remaining batter.
    Always mix batter well for every dosa, so that ravva doesnt settle down.


    It's the simplest recipe and can be prepared within less time.You can serve ravva dosa with some green chutney/ peanut chutney /coconut chutney and sambar.

    Ravva Kudumulu(Vinayaka Chavithi Naivedhyam)

    Kudumulu Recipe:




    Kudumulu is dish offered to lord vinayaka for Vinayaka Chavithi.
    Lord Ganesha represents the power that removes all obstacles in
    every aspect of life.Before starting any new work everyone offers
    prayer to Lord Ganesha for successful results.
    Before starting any puja or vratam first we offer prayer to this deity
    and continue with the puja procedure.
    He is also worshipped as God of Education and Success.
    Vinayaka Chavithi is an auspicious day praying lord ganesha and
    offering him his favourite food like Kudumulu , Bellam Undarallu
    and Boondi Laddu(besan laddu).


    INGREDIENTS:

    Rice Ravva-1cup(made with raw rice)
    Cumin Seeds-1tspn
    Moon Daal/Chana Daal-3tspn
    Oil/Ghee-1tspn                                                
    Water-1cup+1/4cup
    Salt-1/8tspn(for light taste)

    PROCESS:

    Making Rice Ravva:
    Wash the rice and dry on a cotton towel for few hrs.
    Once the rice is dry in a grinder grind/grate/pulse
    till it turns into ravva (like crakled wheat ravva for upma).
    This preparation is to be done ahead of making kudumulu.
    If not possible can make with rice flour too.But they turn
    out like very smooth balls .

    Take a non-stick pan(to avoid sticking to bottom) add oil and once its warm, add cumin.
    Once they start to splutter add moong daal and fry for 2-3 min and now add water and
    salt just little bit for taste.
    As the water comes to boil add ravva mix well and simmer it for 5-10min on very low flame.
    Keep stirring for every 2min and check the ravva .
    Check if the ravva is cooked well .It will just look like dry upma when done.
         

    (At this time can add fresh grated coconut-1/4cup and mix well)
    Turn off gas, keep aside ,allow it to cool little down for 5-10min.
    When its warm enough wet your hands and make medium size balls by pressing in your palm with fingers.
    Repeat with all the mixture.
    Now it needs to be steam cooked  for 5-8min.

    Can use idly cooker or steamer basket in electric cooker and steam cook for 5-8min.
    After they are done, allow them cool down for few minutes.
    Now Kudumulu Naivedyam is ready to offer to Lord Ganesha.
    While serving as tiffin/breakfast can be served with coconut chutney or avakayi(pickle)

    Vegetable Biryani/Pulav(flavoured rice)

    Vegetable Biryani:


    Vegetable biryani also called as pulav in telugu is very delicious rice dish flavoured with biryani masala , which i learned to make from my mom.One can add ready made biryani masala too.This is the main dish in any lunch or dinner party for telugu people.It goes well with raita ,sambar or gravy curry.

    INGREDIENTS:

    Raw Basmati Rice--4cups(serves 3-4 adults)
    Water-7.5cups
    Oil-2tbspn
    Onion sliced-1/2 cup
    Green chilli-8(acc to taste)
    Ginger Garlic paste-2tspn
    Cashew nuts -1/4 cup
    Peas-1/4cup
    Tomatoes diced-2 small/1large
    Beans chopped-1/2 cup
    Potatoes diced into 1/2 inch-1/2 cup
    Mint leaves chopped-4tspn
    biryani masala-1tspn
    Red chilli powder-1/4 tspn
    Bay leaves-2
    Whole Pepper-6
    Ghee/Butter-1tspn
    Lemon Juice-2tspn







    PROCESS:

    I usually cook in electric rice cooker.One can use pressure cooker also.
    First make everything ready with vegies chopped and rice washed and kept aside.
    Take a wide pan, add oil .
    Add diced potatoes, saute for 3min till light brown.Take them out in separate plate.
    Fry bay leaves ,whole peppers,onion, green chilli saute for 3min.
    Add beans ,carrot fry till half done, add peas , ginder garlic paste,mint and saute for a min.
    Add  biryani masala powder, chilli powder at this time and washed rice and fry for 3-4min.
    If cooking in electric cooker transfer this content into it and set the cooker in cooking mode.
    If using pressure cooker start the process in it and cook the rice for 4 whistles and remove from gas
    and allow it cool down.
    Once the lid comes off , add chopped cilantro for garnish and serve it warm with onion or cucumber raita.
    Enjoy the dish with your family.!
















    Goduma Ravva Upma( wheat ravva upma)

    Goduma Ravva upma , cracked wheat ravva upma:




    Goduma ravva is finely crackled wheat that one can find in indian grocery store.
    It is good for health compared to sooji or rice ravva.Anyone can have this as
    breakfast or as light tiffin for dinner.Its very good for Diabetic people.

    INGREDIENTS:

    Wheat Ravva(finely crackled) : 1Cup(serves 1person)
    Water-2cups
    Onion Diced-1/4cup
    Green Chilli-1
    Peas-2tspn
    Potatoes Thinly Diced-1/4cup
    Ginger Finely Chopped-2tspn
    Peanuts/cashewnuts-2tspn
    Cilantro-2tspn
    Turmeric-1pinch
    Salt acc to taste

    Tadka/Popu:
    Oil-2tspn
    Chana daal-1tspn
    Urad daal-1tspn
    Cumin -1tspn
    Mustard seeds-1tspn
    Red Chille Dry-1
    Curry Leaves-2tspn

    PROCESS:

    Heat a non stick pan , add oil and popu ingredients .
    Once they start to crackle add onion,green chilli,potatoe pieces
    and saute till light brown , add peas,,ginger,roasted nuts and saute for a min.
    Add water and salt and cover till it comes to boil.
    Now add wheat ravva and stir and cover and cook on low heat for about 10 min.
    Keep checking and stirring for every2-3 min .
    Usually its cook on low temp , and with the pressure that builds inside.
    After 10min you can notice the ravva cooked and quantity also increases as ravva is cooked.
    Turn off gas andd cilantro and mix.
    Warm and healthy Goduma Ravva Upma is ready to serve.
    Can serve it with peanut chutney, avakai or sambar.

    OATS UPMA

    Oats/oatmeal upma is a healthy and refreshing breakfast.Easy to make and takes 15min to prepare.It tastes yummy and iam sure everyone in your family will love the taste including kids.

    INGREDIENTS: (Serves 2ppl)

    Instant oats-3/4 cup
    Water--1/4to 1/2cup
    Onion--1/4
    Greenchilli-1-2
    Capsicum chopped-1/4cup
    Grated carrot-2-3Tbspn
    Ginger--1/2tspn
    Curryleaves--1tspn
    Cilantro/corianderLeaves--2tspn
    Lemon juice-1tspn

    TADKA INGREDIENTS:
    Veg Oil/EV Oil-2tspn
    Mustard seeds--1/4tspn
    Jeera/Cumin--1/4tspn
    Urad Daal-1/4tspn
    Cashew nuts split-1tspn
    Asafoetida-one pinch
    Turmeric powder-one pinch

    PREPARATION:
    --First on low heat dry roast instant oats just for few minutes (3-4min),and set them aside
    --Now take a pan and when the pan is hot add oil then add cashew nuts and when they turn light brown add tadka ingredients.
    --Now add onions,greenchillies,and saute them till onions are translucent then add capsicum and and cook for few minutes till they are tender.
    --Add grated carrot and after 2-3 minutes add roasted oats and add 1/4 cup water(sprinkle water on the oats).
    --close the pan with lid and cook for 2-3 min on low flame.Check later to see if it is dry and sprinkle some water(if needed).
    --Close and cook for couple of minutes and turn off.Add cilantro and lemon juice and mix and serve hot.
    This recipe tastes good when served warm.You can add vegies according to taste.Adding capsicum gives very yummy flavour.Hope you try this recipe and enjoy it with your family.

    Stuffed Sandwich!




    INGREDIENTS:



  • Bread slices-4


  • Butter


  • Boiled potatoe-1(bigsize)


  • Boiled peas-1/2cup


  • Green chilli chopped-4


  • Curry leaves chopped-1tspn


  • Chopped Cilantro-1/4cup


  • Chopped garlic -1clove


  • Salt to taste


  • Turmeric powder-pinch


  • mustard&cumin seeds-1/2spn each


  • Chat masala powder-1/4spn


  • Green chutney


  • PROCESS:

    Stuffing Preparation:

    Take a bowl and mash the boiled potato and peas.
    Take a pan ,add 1tsbpn oil,once heat add chopped garlic, mustard seeds,cumin seeds,curry leaves.
    Once they splutter add turmeric powder and then add the mashed potato and peas.Fry for 2min.Add salt to taste and chat masala powder.Add chopped cilantro and cook for 2min.

    Allow it to cool to stuff in the bread slices.

    Sandwich Preparation:

    Take each bread slice(wheat or white bread) apply green chutney on onside and on tat add the potatoe curry and spread it equally,and close it with other slice of bread with green chutney applied.

    Now take a pan and add butter and toast the bread on both sides.Similarly prepare other set of bread sandwich with curry stuffed.
    You can also add grated cheese if you like.

    Yummy and healthy stuffed sandwich is ready to serve with some sauce.......!

    Tomato Bath (tomato upma) !



    INGREDIENTS:



  • Sooji or upma ravva-1cup

  • Onion (half )-thinly sliced

  • Green Chilli-4-5

  • Ginger(1inch slice)-chopped

  • Chopped Tomatoes-2

  • Cilantro chopped-1/2cup

  • Cashew/roasted peanuts-3tspn

  • Oil-4tspn

  • Curry leaves-6

  • Mustard seeds-1tspn

  • Urad daal-2tspn

  • Chana daal-2tspn


  • PROCESS:

    Take a kadai or cooking pan ,add oil 4-5tbspn.When it is warm ,add mustard seeds,urad daal,chana daal,curry leaves,green chilli and fry for 1min.Then add sliced onion and ginger and saute for 2-3 min.Add roasted peanuts or cashew according to your taste.(you can also add a tspn of desi ghee for the delicious taste)

    Now add chopped tomatoes and cook till they become soft,also add chopped cilantro and fry for a 1min.Now add water in the ratio1:3.Add salt to taste and let the water come to boil.

    Once the water starts boilingchange the gas to med and slowly add sooji or ravva by stirring continuously.Now stir it well and then close the pan with a lid and let it cook for 2min onlow flame.Check after 2min, mix it well and witch off the gas and close it with lid for 3-4 min .


    Now you can serve tomato bath with some palli chutney or green chutney or even just squeeze lime juice on the top before eating ..It tastes very good when it is served hot..

    Pesarattu Upma!


    Pesarattu upma is one of the popular tiffins of andhra and south indian people. It gives a special feeling of being at home .Try this receipe on w weekend and enjoy with your family.

    INGREDIENTS:

    For Pesarattu:



  • Moong Daal-1tea cup(prepares 6 pesarattu)

  • Cumin seeds

  • Finely chopped onions-1/2cup

  • Green chilli-3

  • Ginger-1inch size piece


  • For upma:

  • Sooji/Upma ravva-1tea cup

  • Onion -1/2(sliced)

  • green chilli chopped-4

  • Ginger chopped-1tbspn

  • Mustard seeds-1/4tspn

  • Urad daal-1tbspn

  • Chana daal-1tbspn

  • Roasted peanuts/cashew-1tbspn

  • Curry leaves-6

  • Chopped Cilantro-2tbspn


  • PROCESS:

    Soak moong daal overnight and next day grind along with green chilli and ginger, to a consistency of dosa batter(little

    Upma Recipe:

    Take a kadai or cooking pan ,add oil 4-5tbspn.When it is warm ,add mustard seeds,urad daal,chana daal,curry leaves,green chilli and fry for 1min.Then add sliced onion and ginger and saute for 2-3 min.Add roasted peanuts or cashew according to your taste.(you can also add a tspn of desi ghee for the delicious taste)also add chopped cilantro and fry for a 1min.Now add water in the ratio1:3.Add salt to taste and let the water come to boil.Once the water starts boiling change the gas to med and slowly add sooji or ravva by stirring continuously.Now stir it well and then close the pan with a lid and let it cook for 2-3min onlow flame.Check after 3min, mix it well and switch off the gas and close it with lid for 3-4 min .

    Pesarattu Upma Process:

    As both upma and pesarattu batter are ready ,take a non stick dosa pan and heat it on med-high flame.Once it is hot take one ladle of batter on pan and spread it into a thin round layer like a pan cake and drizzle little oil around the edges of Pesarattu.


    Sprinkle small quantity of chopped onions, cummin seeds on the Pesarattu and press gently .

    Cook until the edges become brown. Then flip the Pesarattu over and sprinkle little oil over the edges.

    Cook it for a minute , keeping a watch that it does not get charred.Now add upma at the center of pesarattu and roll it , or u can spread upma all over pesarattu and roll it.(acc to ur taste)

    Remove from the pan, and your Pesarattu Upma is ready for eating.Serve it hot with ginger chutney or coconut chutney.

    Sprinkle a little water on the pan and use the same proceedure for making your next Pesarattu.

    NOTE:Donot ferment the batter. If your not making dosas immediately refrigerate the batter.


    Plain Dosa !






    INGREDIENTS:


  • Urad daal-1cup

  • Rice-2cups

  • salt to taste


  • PROCESS:

    Soak urad daal and rice separately for 6-8hrs.Then put it in a blender/grinder and take it into a bowl.Add salt to taste and leave it overnight .

    To prepare dosa, take a non stick pan and heat it,once hot put 1/2 cup of batter and spread it thinly in round shape.Then add oil around it.Once done turn it on other side and let it cook for a 1min.Prepare rest of dosa's in similar way.

    This is simple and plain dosa which can be served hot with peanut chutney,coconut chutney or tomato chutney.

    You can add thinly chopped onions and green chilli's or grated carrot and alter the preparation according to your taste.
